kaja


We need:
Maida 2 cups
Ghee or butter 1 1/2 cup
Soda pinch
Sugar 3 cups
Wheat flour 1 cup
Oil to deep frying
Method:
Add soda to maida and add 2 cups melted butter or ghee and crumble the flour.
Now add water to make a dough and set aside for atleast 2 hrs.
In a pan add sugar and 3 cups water to make a syrup.
Off the stove when u see that the syrup is sticky when u hold it.
Now make the dough to 3 balls and make each ball as a chapati.
If needed use dry flour for dusting.
Now in a bowl add wheat flout to 1/2 cup ghee/butter and apply on one chapati and put the second chapati on the greased chapati.
Now again grease the chapati as above and put the 3rd chapati on it.
Slowly roll the chapatia and keep greasing till u finish roling the chapati completely.
Now cut the roll to small pieces and press each one.
Heat oil in a deep pan and fry the pressed kaja on medium flame till golden brown.
Remove and directly add to the syrup.
Remove from syrup after 5 to 10 mits.
Store in air tight container upto 15days.
