Jalebi

Today's recipe is my all time favorite garam garam ( hot hot) jalebi. Made it for the first time and they turned out super good and yummy. Here is the recipe





We need:



Maida or all purpose flour 2 cups
Rice flour 1 1/2 cup
Baking soda 1/4 sp
Plain curd/ yogurt 2sps
Warm water 1 1/4 cup
Saffron 1/2 sp
Sugar 3 cups
Elachi / green cardamon powder 1/2 sp
Water 2 2/3 cup
Oil for deep frying



Method



Mix the maida and rice flour, baking powder, curd and 3/4th cup of the water in a bowl. Mix well with a whisk.
Mix well and then add remaining water and 1/8th tsp. of saffron powder and mix well till smooth.
Set aside for about 2 hours to ferment.
Mix thoroughly before use.
Prepare syrup by dissolving sugar in the water. Just before the syrup is ready add saffron and cardamom powder.
Heat oil in a kadhai. Pour the batter in a steady stream into the kadhai to form coils. Make 4 or 5 at a time.
Deep fry them until they are golden and crisp all over..
Remove from the kadhai and drain on kitchen paper and immerse in the syrup.
Leave for at least 4-5 minutes so that they soak the syrup.
Take them out and serve hot or at room temperature.
