Egg Kurma


We need:


Eggs 5
Onion 1 medium
Green chilies 3
Curry leaves 3
Cloves 2
Cinnamon 1 inch stick
Cardamom 2
Dry coconut powder 3sps
Poppy seeds 2sps
Chopped cilantro 1/4 cup
Salt to taste
Haldi 1/4 sp
Chili powder 1sp
Coriander powder 1sp


Method:


Boil eggs and peel the shell.
Make small cuts on the egg.
In a pan heat 1sp oil and add whole garam masala( cloves, Cinnamon, cardamom) poppy seeds and coconut powder.
Fry for 2 minutes and make a paste out of it.
In the same pan heat 1 sp oil and add chopped onions and cook.
Make this to smooth paste.
In the same pan heat 1 more spoon oil and add boiled eggs and fry for 3 minutes and keep aside.
In the same pan add rest of the oil and add slit green chilies.
Fry for 2 minutes and add curry leaves.
Now add onion and masala paste.
Add coriander powder, haldi, chili powder and little water to cook further for 3 minutes.
Now add fried eggs and cook till oil appears on top.
Garnish with chopped cilantro and serve hot with roti, rice or any pulao / biryani.
