Mixed Veggi Samosa

Today's recipe is veggi samosa. Used boiled potato, beans and carrots. My son is very picky eater. So I make sure he eats all the veggies with his fav food. He loves samosa, for today I planned to make stuffing with the 3 veggies  which he hates. And I was success, he ate the samosa's without noticing what was the stuffing made of. This recipe is dedicated to my son. Here goes the recipe....

We need:

Potato 2 small
Carrot 1 medium
Beans 6
Maida / All purpose flour  1cup
Sooji 1sp
Oil to deep fry
Salt to taste
Water
Haldi
Garam masala 1/4 sp
Amchur powder 1/4 sp
Cumin seeds 1/4sp
Green chili 1
Cilantro chopped 1/4 cup
Ajwai 1/4sp

Method:

Add salt, Sooji and ajwai to maida and mix well.
Add 1 sp oil and water to make a stiff dough.
Rest it aside  for 15 to 20 minutes.
To make the filling heat pan and add 2 sps oil.
Add cumin seeds and green chili.

Saute and add boiled and chopped potatoes.
Also add 1/2 boiled beans and carrots.
Make sure all the veggi are cut into small pieces.

Saute for a minute and add salt, haldi, garam masala and amchur powder.
Remember we are adding salt in the dough as well so make sure you add  very little salt to the filling.
Mix weel and let it cook on medium flame.
Finally add chopped cilantro and let it cool.
Divide the dough into 9 portions.
Take 1 portion and roll it as poori.
Now cut the poori to half and fold it into triangle shape.
Now fill the veggi mixture into it and close the edges.
Mke sure you apply little water to the edges to close tight.

Now apply the same process with rest of the dough.
Heat oil in a deep frying pan and drop 2 to 3 samosa's at a time to fry.
Do not add too many at a time.
Fry till golden brown and crisp.
Serve hot with any chutney or as it is.

What we mothers have to go through to feed the little ones. :) I am surprised that he doesn't like even potato. How about French fries?
BTW, samosas look great with yummy feeling.
