Pappu Chekkalu

For day 2, I made crunchy, crispy and yummy Pappu Chekkalu. This Andhra snack is usually made during festivals and  small parties. Good to have during tea time. Here goes the recipe.....
 

We need:
Rice flour 2cups
Water 2 cups
Salt to taste
Chili powder 11/2 sp
Green chili paste 2sps
Cumin seeds2sps
Ajinomoto 1/2 sp
Chana dal 1/2 cup( soaked in water for 1 hr)
Oil to deep fry
Roasted and crushed peanuts 2sps
Curry leaves chopped 1 sp
Method:
Add chili powder, chili paste ,salt, curry leaves ,crushed peanuts and ajinomoto to rice flour.
Boil 2 cups of water and add the above rice flour to the water and mix.
Switch off stove and let it to cool.
Now add Cumin seeds,Chana dal which is soaked in water for at least 1 hr.
Add some more water if needed to make a smooth dough.
Heat oil in deep pan.
Take a plastic paper and apply oil to it.
Make a small ball with the rice flour dough and place it on the greased plastic paper.
Now press gently to make it round.
Now add this pressed chekkalu to oil and fry till golden brown.
Make 3 or 4 at a time and fry them, because if u press all at a time and then fry they may tend to dry up and has a chance to break down.
Store in air tight container for more than a month.

Interesting, ajinomoto in chekkalu? It probably enhances the taste. Nice, can munch on them any time of the day.

Perfect snack! I have never seen the addition of ajinomotto in South Indian cooking! Does it make a difference in the flavor?

yes mee too adding Ajinamoto is new we used to add some butter to the batter to make chekkalu more crisp and tasty looks so tempting..
