Crispy Rice Delights

Today we are starting with 2nd week of BM 38. My theme for the week is kids delight-after school snacks . Its soo tough to prepare something for picky eaters like my kids. Kids like snacks and tiffins more than the regular food like rice or roti. I have an idea how to turn regular food to yummy and healthy snack. 

My kids say a big NO to rice.  Also you all might think what to do with  left over rice. Add some veggies to cooked rice, mix little gram flour and fry them in oil. This way you need not worry if your kids are not eating rice. Instead of deep frying in oil you can even bake them to make it more healthy for kids and grownups too.

Tried this yummy and delicious   crispy rice balls this weekend for my kids and guests. And these were loved by everyone. These would make a  perfect after school snack, mid day snack or appetizer for any kind of party.




We need:

Cooked rice 1 cup
Gram flour / Besan 3 to 4 spoons
Grated carrot 1/4 cup
Sliced onion 1 small
Green chili 2 chopped
Capsicum chopped or sliced  1/3 cup
Potato chopped 1/3 cup
Chopped cilantro 3 spoons
Chopped cauliflower 1/4 cup
Salt to taste
Fennel seeds  1/4 spoon
Oil for deep frying
Ketchup 


Method:


In a microwave safe bowl add chopped cauliflower, chopped potato, capsicum and add sprinkle some water.
Cook in microwave for 4 to 5 minutes and let them cool.
In a large mixing bowl add cooked rice, grated carrot, chopped cilantro, salt, chopped chili, sliced onion, fennel seeds and cooked veggies.
Mix everything together with your hands.
Make sure to make a dough kind of mixture.( Press the mixture hard with your hands while mixing)
Now add enough gram flour( for binding ) and mix well.
Heat oil in deep frying pan.
Make small balls with the mixture and deep fry in oil till crisp.
Make sure oil is not too hot, if the oil is too hot the balls might cook from outside but will be raw from inside.
Fry slowly on medium heat till golden brown.
Serve hot with ketchup, chili sauce or green chutney.
