Thai Pineapple Fried Rice


 Thai cuisine is the national cuisine of Thailand. Blending elements of several Southeast Asian traditions, Thai cooking places emphasis on lightly prepared dishes with strong aromatic components. The spiciness of Thai cuisine is well known. Thai food is known for its balance of three to four fundamental taste senses in each dish or the overall meal like sour, sweet, salty and bitter.

Khao phat is one of the most common rice dishes in Thailand. Usually made with  chicken,  shrimp,  coconut or pineapple, or vegetables.  For final day of week 1 of BM 38 under Gourmet Rice Dishes  am here with Thai Pineapple Fried Rice. Here goes the recipe..........

We need:

Jasmine rice / any long grain rice  2 cup
Pineapple chunks(Canned  / fresh ) 1 cup
Raisins 1/4 cup
Red chili flakes 1/2 spoon
Roasted Cashew nuts 1/4 cup
Frozen peas 1/4 cup
Carrot chopped 1/4 cup
Onions sliced or medium pieces 1 cup
Capsicum / bell pepper cubes 3/4 cup
Curry powder 4 spoons
Salt to taste
Oil 4 spoons
Chopped ginger and garlic 1 spoon
Chopped cilantro 2 spoons

Method:

We will be using cooked rice here.
Its better to use a day old rice as most of the fried rices are cooked with rice which is cooked 1 day before.
Heat a large pan and add oil. 
Always cook fried rices in high flame, but make sure you wont burn the food.
Once the oil is hot add chopped  or crushed ginger and garlic.
Saute for few seconds and add onions.


Saute for 2 minutes and add capsicum pieces.
Cook for another 2 to 3 minutes and add roasted cashew nuts and curry powder.

Now add red chili flakes.
Mix well and add cooked rice.
Also add steamed or frozen carrots.

Add  salt to taste and  mix well.



Now add frozen peas, raisins  and pineapple chunks.
Mix it again and garnish with chopped cilantro.
Serve hot.
