Minapa Punukulu

This is one of my kids favorite. Festival season is around and as a  South Indian, we  make  Medu Vada for all the festivals. As it was Diwali yesterday, I have made Medu Vada for my guests. As I had some left over Medu Vada batter I have made these small dumplings  / Punukulu for today's evening snack. This is perfect to serve during breakfast  also with coconut chutney and sambar just as Medu vada. These are  crunchy from outside and soft from inside. This recipe goes to the 3rd day of BM 58 under the theme " Tea Time snack".




Ingredients:

Udad dal 2 cups
Onion 1 small
Ginger small piece
Cilantro 1/4 cup
Rice flour 1/4 cup
Salt to taste
Oil to deep fry

Preparation:

Soak udad dal over night or atleast for 6 hrs and grind it with little water.
Batter should not be too smooth.
Add rice flour, chopped onion , ginger, salt and green chillies.
Add chopped cilantro and mix well.
Heat oil in pan.
Now take little batter and slowly drop it into hot oil.
If u are unable to do with ur hands use a small spoon to take the batter and drop them slowly into oil and keep turning them.
Fry punukulu till golden brown and transfer to serving plate.
Serve with coconut chutney and sambar.

Easy to make snack when you have batter in the fridge. Perfect tea time snack.

Half the time my medu vadas end up taking this shape since I cant make the shape.
