Coconut Macaroons

Macaroon is a type of small circular cake, typically made form ground almonds, coconut or any other nuts with sugar and egg whites. The name of the cake comes from Italian Maccarone or maccherone meaning" paste", referring to the original almond paste which is one of the main ingredient.

Macaroons made from desiccated coconut instead of almond paste are most commonly found in UK, USA, Australia and many more. Coconut macaroons are often topped with a glace cherry or dipped in white chocolate. This recipe goes top 3rd day of BM 71 under the theme " Kids Delight- Cakes and Cookies".


Ingredients:


Shredded coconut 2 1/4 cup
Egg whites 4
Sugar 1 1/3 cup
Vanilla essence 1/2 spoon
Mini ice cream scoop


Preparation:


Mix egg whites, shredded coconut and sugar.
Cook for 3 to 4 minutes on medium flame.
Switch off flame and using mini ice cream scoop, scoop out the mixture and place them on a baking tray.
Place them 1 inch apart.
Bake for 20 minutes on 350 degrees F.

Pistachio Almond Cookies

It has been very difficult to feed dry fruits  to  my kids.  Eating nuts as it is , is a difficult part. So I tried adding nuts powder in cookies.  And you wont believe these  cookies vanished within no time. These rich and delicious cookies with lots of almond and pistachio powder are most popular and preferred cookies in India. As Christmas is around, its perfect time to bake these cookies.

This recipe goes to the week 4,  day 2 of BM 71, under the theme" Kids Delight-Cakes and Cookies". Here goes the recipe.....



Ingredients:

All purpose flour 1 1/2 cup
Pistachio powder 1/2 cup
Almond powder 1/2 cup
Yellow custard powder 2 tbsp.
Powdered Sugar 1/2 cup
Vanilla essence 1/2 spoon
Butter 2/3 cup
Baking powder 1 spoon


Preparation:

Sieve all the dry ingredients ( all purpose flour, custard powder, baking powder) together in a mixing bowl.
Add pistachio and almond powder.
In a separate bowl add butter (which is at room temperature) and sugar.
Beat the mixture well and add vanilla essence.

Cake Mix Cookies

Christmas is just around the corner and kids are all excited about the gifts they are going to get from Santa. My younger one still thinks that Santa is going to visit us in the night and drops her favorite toy near our Christmas tree. As the winter vacation is going to start, kids will be home asking for snacks every 15 minutes. Specially my older one hahahaha.......

Today we are starting with 4th week of BM 71. My theme for the week is "Kids Delight- Cakes and cookies". I saw this simple and quick cookie recipe on Facebook using cake mix. With very few ingredients was able to make some delicious cookies for my kids  Christmas Party at home.  All the kids were so excited to see and taste  the colorful cookies. So this recipe goes to Day 1 of BM 71. 




Ingredients:

Vanilla  Cake mix 1 box
Canola oil 1/2 cup
Eggs 2 
Red sugar sprinklers 


Preparation:


Pre-heat oven to 350 degrees F.

Carrot Rice

If you are looking for any quick rice recipe for  busy days for lunch or dinner or for the lunch boxes this is one of them. Quick and easy recipe if you have  cooked rice handy. As the carrots are bit sweet I have added slit green chilies and Red chili masala powder to this dish. Red chili masala powder is commonly used by South Indian in any veg or non veg curry or stir fries. I have used the store bought Masala powder here but it is very simple to make  at home too.

This red chili masala powder gives  totally a different flavor to any dish. So for day 3, week 2 of BM 71, under  the theme "One Ingredient - Different courses", am here with another dish with Carrots- Carrot Rice. Here goes the recipe.......





Ingredients:

Grated carrots 1 cup
Cooked rice 2 cups
Cashew Nuts 6
Chopped Garlic 1 spoon
Curry leaves 4
Chopped / slit  green chili 2
Kura Karam / Masala Red chili powder 2 spoons
Chana dal 1 spoon
Cumin seeds 1/2 spoon
Salt to taste
Chopped cilantro 3 spoons

Gajar Halwa ~~ Carrot Halwa

Gajar Halwa is a traditional Punjabi dish made with carrots, sugar and milk. Its very easy to make with these 3 ingredients. For  some extra richness we add ghee and some dry fruits. It is delicious to serve cold or warm in any occasion.

For day 2 under one Ingredient - different courses for BM 71, am here with a delicious Gajar ka halwa / Carrot Halwa. Here goes the recipe.........





Ingredients:

Grated carrots 2 cups
Sugar 1 cup
Milk 1 cup
Milk powder 1/2 cup
Raisins , Raisins and almonds 1/4 cup
Butter / Ghee 3 spoons


Preparation:

In flat pan heat butter / ghee.
Add chopped cashew nuts, almonds and raisins.
Saute till raisins blow up.
Now add grated carrots and cook for 10 minutes on low to medium flame.
Now add milk and milk powder, mix well and cook for another 15 to 20 minutes on medium flame.
Now add sugar and cook further till the mixture thickens.
Remove and serve hot or cold.

Carrot Pachadi

Carrots are available through out the year. They have  lots of health benefits.  Carrots are also a good source of vitamin A and K. For next 3 days you will be seeing  3 recipes with carrots. Today we are starting with week 2 of BM 71. My theme for this week is " One Ingredients-Three Courses".  For day 1 am here with one of the simplest and instant Carrot Chutney / Pachadi. MAde with chopped or grated carrots. As the carrots are sweet we add lots of chilies to give some spiciness and tamarind for the extra flavor. Here goes the recipe........






Ingredients:


Carrots chopped 2 cups
Sesame seeds 2 spoons
Green chili 6-7
Garlic 4 cloves
Tamarind pulp 2 spoons
Salt to taste
Mustard seeds 1/2 spoon
Cumin seeds 1/2 spoon
Udad dal 1 spoon
Curry leaves 6
Red chili 2
Oil 5 spoons


Preparation:


Heat 3 spoons oil in a pan and add chopped carrots and chopped green chilies.
Also add garlic cloves and sesame seeds.
Cook for 8-10 minutes on medium flame.
Now add tamarind pulp and salt to taste.
