Foxtail Millet Dosa

Millets are a group of highly variable small seeded grasses widely grown around the world as cereal crops  or grains. Millets are important crops in Asia and Africa  especially in India, Mali and Nigeria.  The most widely grown millet is Pearl Millet  ( Bajra / Sajjalu ) which is important crop in India and parts of Africa.  Other important millet's are Finger millet, fox tail millet and Proso Millet.

Today we will be learning about Fox tail millet / Korralu / Kangni /Kang. It is the second most widely planted species of millet. It is the staple diet among the people in India..It is a gluten free grain, rich in protein, iron, calcium and minerals such as magnesium and phosphorous. Fox tail millets also lowers the risk of diabetes. It helps to lower the blood glucose levels and improve insulin response in the body.


Today's we are starting with 2nd week of Blogging Marathon 94. My theme for the week is "Millet Recipes". So I will be posting 3 amazing recipes with different types of Millets for next 3 days. For day 1 am here with a Dosa recipe with Fox tail Millet. My kids loved this dosa, to be frank no one would know until you tell them that this dosa is not the one which is usually  made with dal and rice. Here goes the recipe........






Ingredients:


Foxtail millet 2 cups
Raw rice 1 cup
Udad dal 1 cup
Chana dal 1/2 cup
Poha 1/2 cup
Methi Seeds 1/2 spoon


Preparing Dosa Batter:



Wash and soak all the ingredients except poha  for about 6-7 hours.
Just before grinding the batter soak poha for about 15 minutes.
Now grind them to smooth batter.
Transfer the batter into a bowl which is double the size of the batter.
Cover and store in warm place to ferment.
Let it ferment for 6-7 hours or until the batter become double the quantity.
Once the batter is ready add salt and make dosa.


How to make Dosa:


Heat a non stick skillet.
Pour a ladle full of dosa batter and spread it in a circular motion to make it thin.
Add a spoon full of oil or ghee around the dosa and cook till nice and crisp.
Once done fold it to half and serve hot with some coconut chutney / peanut chutney / sambar or any podi ( spice powder )

That Dosa just looks super crispy!! I haven't tried Dosa with millets.. I am sure it tasted super.

Lot of people are including foxtail millets in their diet. Being able to use it in variety of dishes is cool. Dosa has come out crisp, just like a regular dosa.
