Kaju Peas Pulao

Kaju Peas Pulao is one of the simplest and easy Pulao to prepare. Great to go with any kind of gravy. I like the crunchiness of the cashew nuts  so am not added them to cook with rice, will be adding them at the end. The rice is sauteed with mild spices and salt to taste. I have added frozen peas here, if you have have fresh peas they would taste better. 

This recipe  goes to day 7 under Mega Marathon theme " Biryani / Pualo / Kichidi festival with Grains ".





Ingredients:


Basmati Rice 1 cup
Cashew nuts 10
Onion 1 small sliced
Green peas 1/4 cup
Cumin seeds 1/2 spoon
Bay leaf 1
Cinnamon stick 1
Cloves 2
Elachi / Cardamom 1
Ginger Garlic paste 1/4 spoon
Oil 4 tbsp
Salt to taste
Chopped cilantro to garnish


Preparation:

Wash and soak basmati rice for 30 minutes. 
Heat oil/ ghee in a pan and add Cashew nuts, saute till golden brown.
Remove and set aside.
In the same oil add sliced onions and fry till brown, remove and set aside.
Now add cumin seeds and  whole masala's in the oil, saute and add ginger garlic paste.
Cook for seconds so that raw smell disappears.
Now add fresh or frozen green peas and saute.
Now add soaked rice along with 1 1/2 cup water.
Add salt to taste and mix well.
Bring the water to boil on high flame.
Once all the water is almost evaporated simmer the flame and cover to cook till rice is completely cooked.
Garnish with cashew nuts, fried onions and chopped cilantro and serve hot with any gravy curry.

The pulao looks supe Sushma with that garnish of fried cashews and onions. A wonderful base recipe for spicy gravies.

I made it recently and should say it is just fantastic. Even I love the nuts crunchy so added them at last minute. Your spread looks absolutely amazing.

Nuts pulao with peas is a good option with curries or even with chutneys. Perfect for festivals or when guests arrive..
