Cream Cheese & Corn Toasted Sandwich

Cream Cheese & Corn toasted sandwich is a great after school snack. Can be packed for lunch boxes and picnic's too. Can also be served for breakfast, lunch and dinner. I have used Philadelphia Garden Cream cheese here which gave this sandwich a great taste and flavor along with corn and bell pepper. You can go ahead and add plain cream cheese too. I have toasted the sandwich with little butter,  if you like it without toasting skip that process and serve.

This recipes goes to the Week 4 Day 1 of Blogging Marathon 100 under the theme Stuffed Dishes. Here goes the recipe.....

Ingredients:

Bread slices 8
Garden Vegetable Cream cheese 1/4 -1/2 cup
Frozen or Fresh sweet corn  3/4 cup
Chopped red bell pepper 2 spoons
Butter 2 tbsp
Salt to taste

Preparation:

I have used frozen corn here, add  it to hot water and let it rest for 10 minutes.
Drain the water and set aside.
I have used Philadelphia Garden Vegetable  cream cheese here  you can use plain cream cheese too.
Cut the edges of the bread slices.
In a bowl add corn, chopped bell pepper, cilantro and slat to taste.

Butter the bread slices on 1 side.
On the other side spread the cream cheese and top it with corn mixture.
Cover with another slice and toast it or grill it in a toaster.
Once done cut the sandwich to desired shape and serve warm.
