Potato Stuffed Jalapeno Peppers

Potato stuffed Jalapeno peppers are a spicy and cheesy appetizer dish for any party. Can be made ahead of time and just heat or bake the peppers just before the party starts. I have added grated Parmesan cheese along with mashed potato, you can even add Cheddar cheese or mozzarella cheese or any kind of these you like to. Potato can also be replaces with sweet potato, any veggie or minced meat of your choice. 

This recipe goes to Week 4,  day 2 of Blogging Marathon 100 under the theme " Stuffed Dishes".




Ingredients:



Boiled & Mashed Potato 1/2 cup
Grated Parmesan Cheese 1/4 cup
Red chili flakes 1/2 tsp
Salt to taste
Chopped cilantro 1 tbsp
Oil 1 tbsp


Preparation:


In a mixing bowl combine together  mashed potato, Parmesan cheese. chili flakes, salt and chopped cilantro.
Wash the Jalapeno's thoroughly and cut them to make equal halves. 
De seed the pepper and stuff the potato & cheese mixture.
I have used air fryer here,  so just add very little oil on top of the filling.
Air fry the stuffed peppers on 400 Degrees F for 7-10 minutes.
If you do not have air fryer, just add little oil on a hot tawa, place the stuffed peppers and cover to cook.
Cook for 5-8 minutes or until the peppers become little soft.
Remove and serve.

Potatoes will go well with everything and they look so tempting. I like the idea of using air fryer. Want to own one soon.

I love stuffed peppers. I made a similar one sometime back and enjoyed them to the core. Air frying would make it so healthy.
