Jalebi

Jalebi also know as zulbia or zalabia is a very popular sweet found in South Asia and Middle East. It is made with flour, sugar and served cold or warm. It is served as it is or in few places it is  served with rabri or with Fafda in Gujarat. Served during festivals and special occasions, this traditional sweet is enjoyed not only by kids but by grownups too. In few places this dish is served as breakfast with  milk or curd.

Jalebi is a crispy and  juicy sweet typically made and served during festivals and weddings. There are different variations in preparing this sweet all over India.  Today I will be showing you a simple and easy method which can be made instantly within few minute. Here goes day 6  and final recipe for week 1 under the mega theme " Sweets and Snacks".






Ingredients:



Sugar 2 cups
Water 1 cup
Maida / All purpose flour 3/4 cup
Baking powder 1/2 tsp
Oil for deep frying
Yellow food color 1/4 tsp
Salt 1 pinch
Baking soda 1 pinch
Milk 2 tsp
Lemon 1/2
Saffron strands
Chopped pistachio for garnish





Preparing syrup:


Add water  to sugar and bring it to boil.
Add the lemon pieces while boiling so that the sugar syrup doesn't crystallize.
Also add 2 tsp milk to remove the impurities.
Once you foam kind of layer on top remove it with clean spatula ( that is all impurities in sugar )
Remove lemon too, add food color and bring the syrup to boil.
Once the syrup is thickened remove from flame  and set aside




Preparing Batter:


In a mixing bowl add flour, baking powder, baking soda, salt and 1 tbsp oil.
Mix everything well, add little water at a time to make a smooth batter.
Keep stirring so that no lumps or air bubbles are formed.
Transfer the batter to piping bag and cut the corner little bit.
Heat oil in flat pan and start making jalebi in circular shape as shown in the picture. 
Fry on medium flame on both sides till nice and crisp.
Once done remove  and transfer the fried jalebi immediately into sugar syrup. 
Using spatula press from top so that the jalebi's are soaking well.
Repeat the same process of frying some more jalebi's and soaking them in syrup.
Let sit for 5 minutes and remove to serving plate.
Garnish with chopped pistachio and saffron strands.
Serve hot or at room temperature.
