Bread Vada ( Mini version)

Hello friends ! Feels so good to be back, blogging after almost 2 months break. Was in India ( Hyderabad) to attend my sister's wedding, met all my relatives and friends. Feels so good to see all of them at one place  after so many years. Unfortunately couldn't meet any of the food bloggers :(
Will plan to meet in the next visit for sure.

Coming to blogging, today we are starting with 69th Edition of BM. My theme for this week is " Small Bites". Serving anything in a mini version / bite size. For day 1, am here with nice and crunchy Bread Vada. I must say this is healthy too as am adding lot of greens and carrots to this, specially cilantro, mint and spinach. Great snack for any party, or as a snack for lunch boxes. Here goes the recipe.....






Ingredients:


Bread slices 4
Chopped onions 3 spoons
Chopped cilantro 2 spoons
Chopped mint leaves 2 spoons
Chopped Spinach 3 - 4 spoons
Grated carrot 3 spoons
Salt to taste
Corn flour / Rice flour 3 spoons
Chili powder 1/2 spoon
Yogurt / curds 2 spoons
Oil for deep frying


Preparation:


In food processor or blender add the cut bread slices to make them crumbly.
If u do not have food processor simply make bread into very small pieces.
Add chopped cilantro, spinach, mint , grated carrots, salt, chili powder  and corn flour.
Mix everything well.
Now add few spoons of water to curds and make it smooth.
Add this curds to the bread mixture and mix well.
Heat oil in deep frying pan.
Now make small vada's , small bite size and drop few at a time to fry till golden brown color.
Fry till nice and crisp.
Serve hot with any ketchup or hot sauce.

The bread vadas look nice and crunchy..would love to munch on some..I sometimes dunk them in a gravy to serve as koftas.
