Vankaya Bajji

Street food are always tasty and delicious. Vankaya bajji is a tasty snack made fresh on a cart and sold while they are hot. Thse bajji's are very popular in Andhra Pradesh. These bajji are made fresh along with onon bajji, chili bajji and many more.

Today we are starting with 2nd week of Blogging Marathon 82. For day 1, am here with a yummy street food Vankaya Bajji under the theme " Make Street food at home". Here goes the recipe.....



Ingredients:


Brinjal / Vankaya  3
Gram flour / Besan 1 cup
Rice flour 2 spoons
Chili powder 1/2 spoon
Salt to taste
Chaat masala ( optional)
Oil for deep frying



Preparation:


Cut brinjal into long thin slices like potato chips.
Add them to  salt water as soon as you cut them.
In a mixing bowl add gram flour, rice flour, salt and chili powder.
Mix everything well, add water to make a smooth paste( not too thin)
Heat oil in deep frying pan.



Once the oil is hot,  dip the slices in batter and drop them in hot oil.
Add few slices at a time.
Fry till nice and crisp.
Remove and place them on paper towel to remove excess oil.
Sprinkle some chaat masala on top and serve immediately.
Can be served with any chutney or ketchup.

Wow your bajjis are looking so sinful Sushma. Interesting to know that even brinjals are common street food in Andhra, as I have only seen other vegetables..will check it out next time..:)

Mouthwatering bajji! These are not common at my home but one of my cousin makes it.

My mother in law used to love these , but we used to make with Besan , I am sure rice flour must be tasting different .

I'd have to substitute another vegetable as I hate eggplant - otherwise looks like such a crispy snack - perfect for cold winter evenings

bhaji or pakora we can eat anytime and with any vegetables... Looks so crisp and just want a plate for myself.
