Pineapple Upside Down Cake

An upside down cake is a cake that is baked in a single pan with topping at the bottom of the pan. Chopped or sliced fruits like apples, cherries, pineapples and peaches along with butter and sugar mixture are placed on the bottom of the pan before the batter is poured. This simple, delicious and beautiful looking  cake was on my to-do list for some years now. Finally I have made it.

Pineapple upside down cake can be a great after school snack or as a dessert for any kind of party. With the winter break approaching bake this cake along with your kids, and I promise they would love to do it. So, this recipes goes to week 3,  day 2 of Blogging Marathon 95 under the theme " Make them Cakes".





Ingredients:


Pineapple rings 1 tin
All purpose flour 1 1/2 cup
Sugar 1 cup
Eggs 2
Baking powder 1 teaspoon
Salt 1/2 teaspoon
Maraschino Cherries 8-10
Unsalted Butter 1 stick + 4 tablespoons for topping
Light brown sugar 1/4 cup for topping






Preparation:




Preheat oven to 350  degree F.
Melt light brown sugar and 4 tablespoons butter in small frying pan on medium heat.
Keep stirring till you see sugar turning brown and bubbly.
Remove and pour the mixture in a baking pan and spread evenly.
Arrange the pineapple pieces and cherries on top of the sugar and butter coating.
In a large mixing bowl add all dry ingredients ( flour,  baking powder, salt )
In another mixing bowl add butter and sugar, beat the two with electric hand mixer until it become light and creamy. ( use fork or whisk if not using any blender )
Now add eggs and beat until smooth.
Add dry ingredients little at a time into wet ingredients and blend well with hand mixer ( repeat with rest of the dry mixture ) 
Now spread the batter on the pineapple rings which we initially arranged in the baking pan.
Spread evenly and bake for about 40-45 minutes.
Cool the cake before you flip over to transfer onto serving plate.
Enjoy with some whip cream on top or as it is.

Wow, the cake has come out beautiful, pineapple slices with a cherry in the middle. Upside down cake is on my to bake list. Good one for the holiday season.

yours came out so beautiful and absolutely perfect. it's funny even though I know the pineapple version is more popular have never made it but made the banana upside down cake so many times. Will have to try the pineapple soon
