Coconut Poppy Laddu

Holi is a Hindu  spring festival originating from Indian subcontinent, is celebrated all over India. This festival signifies victory of good over evil. Holi is also called as " festival of colors or festival of love ". Children and yound people form groups and play with dry colors or coloured colutions and water guns. Traditionally washable natural plant derived colours such as turmeric and kumkum were used. But the trend has changed and you get lot of other chemical based colors are available in market these days. People throw colors at each other  all day, sign and dance.

Traditional snacks or delicacies are prepared on this day, such as Gijiya, malpuas and most importantly bhang which is a adult drink based on a intoxicating herbs. Today I have prepared a laddu with freshly grated coconut and poppy seeds. To make it little healthy and rich i have added jaggery instead of sugar. If the read the recipe you would know that I  have made this laddu with the stuffing which is typically used to fill in karanji / gujia.  Karanji is a fried pastry with coconut and poppy stuffing.

Coconut and Poppy Laddo is going to the 2nd day of Blogging Marathon of 97 under the theme " Valentines / Holi special recipes". Here goes the recipe.....





Ingredients:


Fresh / Frozen grated coconut 2 cups
Poppy seeds 1 cup
Grated jaggery 1 cup ( add more according to your taste )
Elachi / Cardamom powder 1/2 spoon
Ghee or butter to grease your hands to make laddu



Preparation:


In a non stick pan add fresh or frozen grated coconut poppy seeds and grated jaggery.
Mix well and cook for 8-10 minutes on medium flame.
Keep stirring in between to avoid burning at the bottom.
Let the jaggery melt completely and the mixture become light brown and thick.
Switch off flame and let the mixture cool completely.
Grease your hands with ghee or butter, take a small amount of coconut mixture to give it a round or laddu shape.
Repeat with rest of the coconut and poppy mixture.
Store in air tight container.
If not consumed in 1 day, refrigerate  for up to 1 week.

Never tried poppy seeds in a laddu recipe. This is a unique blend of ingredients which must ahve resulted in a delicious treat.
