Ginger Chicken

Ginger Chicken is Indo- Chinese style chicken dish served with fried rice or Noodles. Freshly blended ginger, garlic and onion paste gives this dish a nice fresh and strong flavors. Ginger not only tastes good but also helps the dish more digestible. This is my husband's favorite Chicken dish which he was asking me to prepare since long time. Finally his wish fulfilled.  Here goes the recipe.....



Ingredients:


Chicken 2 lbs with or without bones
Ginger 1/2 cup
Garlic 1/4 cup
Onions 2 large
Green chili slit 2
Curry leaves 6
Salt to taste
Turmeric powder 1/4 spoon
Soy Sauce 2 tbsp
Vinegar 1 1/2 tbsp
Black pepper powder 1 spoon
Oil 5 tbsp
Chopped cilantro to garnish
Ginger julienne's to garnish 


Preparation:


I have used boneless chicken here.
Cut the chicken into small bite size pieces.
Wash thoroughly  and marinate with soy sauce, vinegar and salt.
Set aside for 25-30 minutes.
In a large pan heat 2 tbsp oil and add the marinated chicken.
Cook till nice and tender, remove and  set aside.
Prepare a smooth paste of onions, garlic and ginger.
In the same pan add rest of the oil and add the onion, ginger paste.
Add turmeric powder and cook till the raw smell disappears and the paste oozes oil.
Add cooked  Chicken pieces along with black pepper powder, curry leaves and slit green chilies.
Fry till the masala is nicely coated to the chicken.
Garnish with chopped cilantro and ginger julienne.
