Oats & Sooji Upma

Upma or Uppittu is a dish originated from Southern part of India. It is made as a thick porridge from dry roasted semolina or coarsely ground rice. Depending on everyone's taste different types of vegetables or seasonings are added. The most popular variety of upma are made with sooji or semolina, cracked wheat upma, rice upma, aval upma, vermicelli upma and the list goes on. 

Today I will be preparing a tasty and healthy version of upma with oats and sooji. This is one of the easiest and healthiest upma  as it also has mixed veggies like carrots, beans and peas. Add what ever veggies you have at home or the veggies which you think would taste better with oats and sooji. 



This recipe goes to week 4, day 2 of Blogging Marathon 114 under the theme " Brighten your Breakfast". Lets check out the ingredients and the procedure.....

Ingredients:


Oats 1/2 cup
Sooji 1/2 cup
Broken cashew nuts 1-2 tbsp
Chopped onion 1/4 cup
Slit green chili 2
Chopped cilantro 1/4 cup
Mixed veggies ( carrot, beans, peas ) 1 cup
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Udad dal 1/2 tsp
Chana dal 1/2 tsp
Curry leaves 6
Lime juice 1 tbsp
Salt to taste
Oil / ghee 2-3  tbsp




Preparation:


Dry roast oats and set aside.
Heat 2 1/2 cups water, bring it to boil and add mixed veggies.
Cook for a minute or 2 and switch off flame.
Heat oil in non stick deep pan or kadai.
Add mustard seeds and let them crackle.
Now add cumin seeds, udad and chana dal.
Saute for few seconds and add cashew nuts, chopped onions, curry leaves and slit green chili.
Saute till onions turn light brown.
Add sooji and fry for 3-4 minutes.
Now add roasted oats and mix well.
Add salt to taste and the veggies along with water.
Mix everything well, adjust salt and cover to cook for 5-6 minutes on low-medium flame.
Add lime juice, chopped cilantro and give it a stir.
Serve hot with any chutney or pickle.

This is such a delicious version Sushma, I have made this version a couple of times when I wanted to include oats, very healthy and easy to make too.

Combining oats with rava is a smart idea Sushma. I have made oats upma and rava upma. But this combination is something I want to try later. Bookmarking the recipe!
